• Chaofeng Hyson — one of China’s oldest named green teas, from Zhejiang province; also known as Dragon’s Tea, “Hyson” derives from the Cantonese for “flourishing spring” and was among the first Chinese teas exported to Europe in the 18th century, prized by the British East India Company for its quality
• White Tips — the unopened leaf buds harvested before they unfurl; they contain higher concentrations of L-theanine and EGCG (epigallocatechin gallate) than mature leaves, giving a sweeter, more nuanced flavour and a gentler caffeine release
• EGCG — the most studied catechin in green tea; a potent antioxidant linked to cellular protection and metabolic support, and the compound behind green tea’s long-standing reputation as a health-promoting drink
